Me and my mom's story of lime sauce:

When I was six or seven years old, I was woken up at dawn from the sound of the t’bal crushing Kampot pepper. My mom was up early again preparing lunch for our family. As I listened to her footsteps lying in bed, I could imagine her five-foot frame walking towards our backyard, where the sun was barely peeking over our jackfruit, banana, mango, and lime trees. Mom picked the juiciest limes to squeeze into her bowl. Her sun-tanned hand mixed the fresh lime juice with Kampot pepper, salt and palm sugar until the magic dissolved. Mom took pride in her cooking, it made her feel good to feed her husband and her children with the recipes that were passed down to her from her mother.

Many monsoon periods passed and at 23 years old, I found myself on Canadian soil starting a new life as an international student. It was mid-winter, -30 C in Hamilton, Ontario and the strange, white fluff in the sky came down hard on my eyelids. With nothing familiar in sight, I felt uprooted as the palm trees, the red soil, my mom’s smile and her comforting food disappeared. During these times, the longing for home visited me often. Although, I welcomed the fresh, cold scent that stung my nostrils, it wasn’t the smell of home…

Craving my mom’s traditional, home-style cooking, like her chicken ginger stir-fry, it was freshly cracked Kampot pepper, and the rich caramel flavor of palm sugar that jolted me back home. Remembering the ingredients that came from our family’s land inspired me to bring authentic ones to Canada so that I could continue to share my mom’s cooking with family and friends.
